New Indian restaurant brings spice and tradition to Kalgoorlie-Boulder

One of Kalgoorlie-Boulder’s newest restaurants is quickly making a name for itself as a provider of quality authentic Indian cuisine.

Ruby’s Rasoi officially opened in October at Kalgoorlie Central on Wilson Street and has since developed a loyal following of repeat customers, offering both dine-in and take-away menu options.

Owner Ruby Kaur has more than 12 years of five-star restaurant experience and decided to open the new business with manager Rampreet Singh after she moved to Kalgoorlie-Boulder with her husband about one year ago.

The restaurant has been quick to get involved with community events and hosted a Bollywood night at the Goldfields Function Centre last month.

Mr Singh said restaurant staff were passionate about bringing a taste of India to the Goldfields.

“We realised that we need to take on the challenge to bring to Kalgoorlie a rich cultural and culinary history of north India,” he said.

“We wanted to make Ruby’s Rasoi one of the best restaurants of Kalgoorlie where everyone will come and enjoy the perfect blend of authenticity with modern dishes.”

One of the distinguishing features of the restaurant is the charcoal-fired tandoor oven, which Mr Singh said was used to create grilled meats, vegetarian dishes and bread.

“If we are honest, is there anything better than freshly baked bread?” he said.

Ruby’s Rasoi — Ruby’s Kitchen — caters for people who enjoy different levels of spice, with Mr Singh saying some ingredients were sourced directly from India.

“Our spices are ground and blended in-house,” he said. “We use specially sourced spices direct from India to achieve our own secret spice mixes and curry sauces.”

Mr Singh said staff had received much positive feedback since opening, with a lightly spiced goat curry and traditional butter chicken proving to be winners with the locals.

“Our Indian menu is extensive and provides a wide range of seasonal and traditional favourites,” he said.

“We invite everyone to explore our menu and discover why we’re the taste worth trying.”
