From the fire brigade to the freezer: Luke Fox’s journey from firefighter to gelato maker

For Luke Fox, firefighting was the perfect career at first. The equal-time roster — four days on, four days off — gave him plenty of time to go surfing and play music at gigs around Western Australia. He had a good, stable income and was helping people, and his work mates felt like family. But 18 months ago, after seven years in the brigade, Luke hung up his helmet for good. He threw caution to the wind and used his savings to buy a caravan shell, refitting it as a food truck and teaching himself to make his own non-dairy ice-cream in the kitchen of his share-house rental. Since then he’s travelled the State, selling his Sun Cream ice-cream in some of the most idyllic locations around Western Australia: the Ningaloo Reef, Margaret River. He’s gone from dealing with people experiencing the worst day of their life to those experiencing some of their best. But while it might seem like a dreamy job to those looking in through the window of his food truck, it’s been an incredibly tough journey that is only just starting to pay off, says Luke. “I went from getting paid every Tuesday in a job I enjoyed to being an accountant, a trailer fabricator, an ice-cream maker, marketing manager, bookkeeper, strategist. You’ve got to do every job. It was really humbling to go back to what felt like square one and learn everything all over again,” he says. “Ultimately I found a new rhythm to life. Working in idyllic locations, selling ice-cream by the beach. Really making sure that life worked for me.” Luke found his way into the fire brigade at 26 years old after spending his early 20s travelling the world. He had worked in community service from a young age and was determined to help people. But over time, he grew restless with the stability it offered and the intensity of the job. “I was really happy in the job,” he says. “I had a lot of purpose. I loved what I did, I loved the culture and the sense of family. It was an incredibly hard decision to leave. But I found myself wanting a new challenge and needed to grow, as well as changing some of the aspects of the lifestyle that came with shift work and the commitment to the fire station. I wanted a bit more freedom for myself and the need for that became pronounced during the whole COVID experience. “Traditionally it has been a lifelong career, and there is a lot of honour and responsibility in that. It really is a job where experience counts. If my circumstances were different, if I had kids or others depending on me, I might have been more comfortable staying. But curiosity and opportunity took me in a different direction.” He wasn’t sure what he was going to do but he knew he had to find a risk worth taking. In the middle of COVID he took a year off and drove around Australia, working jobs he never thought he would: a wheat harvest in far west South Australia, landing hot-air balloons in Byron Bay. He figured he wanted to do something that would allow him to travel, and bring smiles to people’s faces, but he returned from his lap with more questions than answers. He went back to what he knew at the fire brigade, and it wasn’t until a chance encounter a year later on a winter surf getaway in north-west WA that the idea for ice-cream popped into his head. “I was in Exmouth and was catching up with a friend, driving down to Yardie Creek for a surf. We were talking about what the town needed, and we got talking about ice-cream. For the next year-and-a-half I just couldn’t stop thinking about it,” he says. It wasn’t until Luke broke his ankle surfing in south-west WA that he decided to do something about it. Forced to take three months away from the fire brigade, he prised himself off the couch and kept himself busy putting his dreams into action. “I bought a caravan shell and started building a food truck during the day. At night I was learning to make ice-cream in my kitchen. It was a very intense summer, but within 10 weeks I had built a truck and learnt to make a product in my style,” he says. Finally, with the business ready to roll, he quit the fire brigade and packed his car and caravan and headed north for the winter. It was a baptism of fire for Luke. While the Ningaloo Reef was a beautiful place to work, and afforded him the time and freedom to enjoy his surroundings, it came with its own unique challenges. “It’s a pristine wilderness in such a remote area, and that’s great, but running a business it’s like, how do you generate a reliable power supply to run the scale of equipment you want? And working out what people want, how to operate, when to operate. That’s the real challenge.” “I went up there with an idea of how things were going to work but no solid plan. I also couldn’t afford to pay rent and run my business at the same time. I lived out of my car for nearly three months, moving between a storage unit, the food truck, and my car. It was a very humbling experience. But ultimately I solved the problems and found a way through.” At the end of the winter tourist season in Exmouth, Luke headed back down to the South West, where he’s spent the summer selling ice-cream. In the past year he’s ironed out some of the early teething problems, and is now preparing to head back up north for the winter. It’s a lifestyle job he says he wouldn’t change for the world, and he’s stoked to be following the sun and bringing smiles to people’s faces. “It’s a very seasonal life, and with tourism I found that works really well,” he says. “To be able to spend the summers in south-west Australia and then up at the Ningaloo Reef through the tourism period in winter, it’s a beautiful way to travel with purpose. “One of the benefits is I get to spend a lot of time in the water up there. The reef is truly one of the most beautiful ecosystems on the planet. It’s a really special place. “And giving ice-cream to a smiling kid? There is truly nothing better than that.”
